Gluten free Radicchio rosso jam

The province of Treviso, in eastern Veneto, is renowned for the cultivation of red radicchio, a variety of chicory that is lightly bitter and crunchy. Thanks to its flavour and beauty, it has become many chefs’ star ingredient. Although, like a lot of good things, it only grows for few weeks: the idea of this jam came to me when I wanted to harness its flavour all year long so that I could use it in unusual ways.

Store the jar in a cool, dry place away from direct light and heat. Once opened, store it in the fridge and use it within a short amount of time.

A surprising hamburger
If you consider a hamburger an actual delicacy, try this gourmet version with beef, fontina cheese and this radicchio jam on a chia seed bun.
For a tasty and all vegetarian meal, pair the compote with eggs and boiled potatoes and for an extra touch add it to your pasta with beans, just add a teaspoonful at the centre of the dish with a dash of pepper.
